Halghuane (Adyghe: хьэлыгъуанэ) is a traditional Circassian tea bread. Similar breads are: bagels, simit, bubliki and baranki.
Ingredients
[edit]Typical ingredients are flour, eggs, water, and salt, which are combined into a firm dough.
- 5 tea cups of warm milk
- 1 tea cup of liquid oil
- 1 egg (white in, yolk out)
- 2 teaspoons of sugar
- 2 teaspoons of salt
- Half a packet of yeast
- Flour
Preparation
[edit]First, egg white, milk, salt, liquid oil, sugar and yeast are added to the middle of sifted flour. A dough is kneaded until it becomes soft, and covered with a clean cloth, it is left to ferment for up to 1 hour. The leavened dough is divided into 18 equal pieces, and each piece is first rolled into long ribbons and folded in half, then rolled again and the two ends are connected to each other in the shape of a bagel and placed on a tray.
After rising on a tray for up to 1 hour, egg yolk is rubbed on it, and it is cooked at 200 degrees for 25-30 minutes until it is browned and removed from the oven. After waiting for it to cool slightly, you can eat it.
