Hello Mentor! I work in the marketing department for a not-for-profit senior retirement community that is not represented on Wikipedia - I would like to create an article about our community. I've read the conflict of interest article. I'm not sure it that means that I shouldn't be the one to write about it? If not, then who?

Hey @Slidegirl62, welcome to Wikipedia! You can create the article yourself but it will have to be reviewed through our Articles for Creation (AfC) process.

There's some useful info here for you: User:Encoded/Drafts, as well as the information if you scroll down to the bottom of that page and enter the article name into the box it'll set up the draft with a menu for AfC within it so you can easily submit it for review. If you have any trouble with this let me know and I can give you a hand!
